Genasina Oggarne
This is a typical
South Canara dish. Served as morning snack. Tastes so good, very filling as
well. Had tasted Genasina oggarne when Jyothi prepared and got it for our
morning hike last summer. We all loved it.

Ingredients:
o
2 medium sized genasu/ sweet potato
o
1 Small onion
o
½ Tsp chopped ginger
o
1 Tbsp Groundnut/ peanut
o
Curry Leaves
o
2 green Chillies
o
1 tsp- Turmeric powder
o
Salt to taste
Seasoning:
o
½ Tsp – Mustard
o
½ Tsp Urad Dal
o
A pinch Asafetida
o
Coconut oil
Method:
o
Wash the sweet
potatoes, peel the skin and chop them to small pieces. Chop the onion to small
pieces too. Slit green chilles and set aside.
o
Heat oil in pan and make the seasoning with the above
ingredients. Add peanut and roast.
o
Add chopped
onion, ginger and green chillies, saute well for a min. Now add chopped sweet
potatoes and curry leaves. Add turmeric powder, mix well. Cover the pan a cook
for 3-4 mins on low to medium heat.
o
Mix well add salt
and cook till done.
o
Squeeze lemon and
garnish with chopped coriander leaves and serve.
