Mohanthal
Mohanthal is
a traditional Gujarati/ Rajasthani recipe for a gram flour fudge, prepared in
many auspicious occasions especially during Diwali. Mohanthal
is made by sautéing gram flour, ghee, and milk in a pan until the combination
becomes golden and fragrant Easy and yet tasty, hope you all will like
and try it.

Ingredients:
o
2 Gram Flour/
Besan
o
1 Cup Sugar
o
3/4th
Cup Ghee/ Clarified Butter
o
3/4th
Cup Milk
o
A Pinch of Saffron
strands
o
¼ tsp Cardamom
Powder(optional)
o
Assorted nuts to
garnish

In a mixing bowl
take the gram flour, to this add 2 tsp of ghee and 2 tsp milk and give a good
mix. Set it aside for ½ hour. After the flour has rested for ½ hour sieve the
flour. If there are crumbles just run the flour in a mixie jar. Sieve the
flour.

Take a saucepan, heat
the ghee and add the sieved flour give it a stir. This should be done on low
flame. Keep doing it for 15 mins, the color changes.

In another
saucepan take the sugar add water just so the sugar gets covered. Add saffron
strands and cardamom powder. Mix well. Let the mixture come to boil.
o To the gram flour mix just sprinkle a little water and mix. Now increase the heat add ½ cup milk and quickly mix. After the milk evaporates add the sugar syrup and give a good mix. Keep mixing the mixture for 3-4 mins and put off the heat. Transfer the mixture to a greased plate. Garnish with assorted dry fruits(nuts). Leave it for couple of hours and cut the Mohanthal to desired size and shape.
