Appi Payasa
Appi payasa is a authentic dish
from Karnataka. Wonder why is it called Appi Payasa. Maybe because it is prepared
using small bite sized appe, made of maida or rava. It’s a little time
consuming recipe but the end product is super tasty.

Ingredients:
o
1 Cup- Wheat flour/ Godhi Hittu
o
1 Tbsp – Fine Sooji/ rava/ Semolina
o
4 Cups- Milk
o
1 Tbsp- Hot Oil
o
3/4 Cup- Sugar
o
Oil to deep fry
o
Cardamom powder (Optional)
o
Saffron strands (Optional)
Method:
o
In a mixing bowl
mix wheat flour, sooji, hot oil and knead the dough like a poori dough(meaning
not too loose).
o
Let the dough
rest for 30mins.
o
Bring the milk to
boil, the milk should boil and reduce to ¾ quantity.
o
Knead the dough
once again, roll the dough like poori and cut it with the help of a pizza
cutter. Else you can make pooris and cut it after they are fried as well.
o
Deep fry the cut
pooris till golden color. Keep it aside.
o
Add the fried cut
pooris to the boiling milk. Let the mixture boil for 10-15 mins on low to
medium heat.
o
Add
sugar/cardamom powder/ saffron strands and let it boil for 5-10 mins and switch
off the stove.
