Besan / Gram Flour
Sugar
Water
Cloves
Cardamom
Dry Fruits (Raisins, Cashews)
Oil

1. In a mixing bowl
mix gram flour and water. Add water little by little to make a thin batter.
The batter should not be too thin it should be flowing consistency.
2. Heat oil to deep
fry.
3. Meanwhile in a
pan add sugar and water together to make sugar syrup. The sugar syrup must be
1 string consistency. Add cardamom and cloves to the sugar mixture and stir
while making the sugar syrup. Check for single string consistency ie If you
take a drop between your thumb and index finger you can see a single string
forming and that is the right consistency, Set aside.

Now to make Boondhi. Pour one ladle of batter over the
ladle with the hole holding it just above the oil. The batter drips from the holes
and forms droplets in the oil. Fry the droplets and turn over and fry to
golden brown.

Drain the boondhi onto a paper towel.

Add in the boondhi to the sugar syrup and mix well. Let
it cool. If you are trying to make laddus make them while they are warm. I
just like to eat sweet boondhi in a cup J
