Method
1. Sieve the flour
and baking powder together and set aside.
2. Cream sugar and
butter well, so that they become smooth.
3. Add curd to the
sugar mixture and beat well. Blend well if using an electric hand mixer.
4. De-seed the
cherries and put them to a small bowl. To this add brown sugar (optional). You
can use the normal sugar too. Blend the cherries and sugar together, the
mixture does not have to get pureed. Set it aside.
5. To the creamed
sugar mixture, add sieved flour little by little and mix well. Add milk also
little by little and mix so that the batter gets well blended.
6. Grease your cake
pan, pour half the cake batter. Spread the entire cherry mixture on top f
this. Pour the remaining cake batter so that the cherry mixture is covered
with the batter.
7. Bake the cake at
325 degrees F for about 50 minutes to 1 hour, until the edges turn brown and
a toothpick inserted into the thickest section of the cake comes out clean.
Remove from oven and let cool in the pan for 15 minutes.
8. Cherry Cake
ready to serve.
