Method
1. Add a pinch of
saffron to hot milk and set aside.
2. Take a wide and
a heavy bottomed pan. Heat on medium to low. Melt the butter. Do not let the
butter boil.
3. Now mix the milk
powder slowly and nicely.
4. To this add
condensed milk. Combine well without any lumps.
5. Add the soaked
saffron milk and cardamom powder to the mixture and mix well.
6. Keep mixing
well. The mixture turns thick and starts leaving the edges, put off the heat.
Transfer it to a different container. This is because the mixture may get
heated more which inturn may not yield soft pedas.
7. Handle the dough
when you can withstand the heat of the dough. Start making the pedhas. Take a
small amount and make a smooth ball. Press the middle of the ball with your
finger and make a dent. Place chopped nuts on the dent.
8. Else you can
roll the dough a bit thicker and use a cookie cutter and make you kids
favorite shape.
9. Transfer the
pedhas to an airtight container. For longer use say a week or so refrigerate
the pedhas.
