Srikhand
Shrikhand
is a yummy and a classic dessert made with drained curd, sugar and spices.
It’s nothing but plain curd transformed into an
aromatic delicacy flavored with saffron and cardamom and lot of nuts.
Other variation to Shrikhand is
to add mango pulp and it becomes Amrakhand, just add cardamom it becomes
Elaichi Shrikhand, add almond and pista it becomes Badam Pista Shrikhand.

Ingredients

Fresh Curd
Sugar
Cardamom Powder
Saffron Strands
Milk

Method
1. Take a muslin
cloth and hang the curd. Let the water / liquid / whey drain off. This
process may take about 3-4 hours. Keep it in a cool place else the curd may
become sour.
2. Soak the saffron
strands with a teaspoon of milk.
3. Now combine the
hung curd, sugar, cardamom powder and soaked saffron and mix smooth and
creamy.
4. Serve chilled
with or without chopped nuts (almonds / pistachios).
