Malai
Kofta is a very popular North Indian dish. This dish has a creamy, rich, mild
and lightly sweet gravy with fried paneer balls. Malai Kofta serves as a great side dish for rotis or any special rice / pulaos.

For the Koftas:
Grated Paneer
Boiled Potato
Garam Masala
Red Chilli
Salt
Maida
Oil
For the Gravy:
Onion
Tomato
Cashew
Almond
Ginger Garlic Paste
Garam Masala
Red Chilli Powder
Milk
Salt
Dry Fenugreek Leaves

Method
1. For Koftas: In a
mixing bowl add grated paneer, mashed potato, salt, garam masala, red chilli
powder and maida, mix well. Make small balls from this and deep fry to golden
brown.
2. For Gravy: Grind
tomato and onion to smooth paste, grind cashew and almond to a smooth paste.
3. Heat tbsp. oil
in a broad pan. To this, add tomato and onion paste and sauté till there is
no more raw smell. Add ginger garlic paste and sauté for 2-3 minutes. All
these process of preparing gravy should be done in medium to low flame.
4. Add cashew paste
and sauté for 2-3 minutes. This mixture starts becoming thick and starts to
leave the edges of the pan. Add the dry powders and salt and mix well and
cook for 2-3 minutes more.
5. To this, add
milk and water and check for the consistency and check for taste J
6. As the gravy
starts boiling, add dry fenugreek leaves and mix.
7. Put off the
stove after the gravy has a good boil.
8. Add the koftas
just before you are ready to serve.
9. Garnish with
heavy cream and chopped coriander leaves.
