Badnekai
Huli Gojju is a very simple and fast recipe with very little ingredients. But
if your taste buds are dead, go for Badnekai Huli Gojju, which with its tangy
and sweet flavor. One of the common dishes in Karnataka that goes well with
rice or chapattis or rotis.

Eggplant
Tamarind Pulp
Turmeric Powder
Jaggery
Salt
Green Chilies

Mustard
Urad Dal
Curry Leaves
Asafetida
Oil

Method
1. Clean the
eggplant and pressure cook with a little water for 3 whistles.
2. Once cooled,
peel of the skin and mash the eggplant pulp with green chillies. Add tamarind
pulp, jaggery and salt. Mix well.
3. Heat a little
oil in a pan and do the seasoning. Lastly to the seasoning add curry leaves
and put off the stove.
4. Pour the
seasoning over the gojju.
5.
Serve with steamed rice.
