Bhindi Do Pyaza
Bhindi
in hindi means okra and pyaz means onion. In this dish onion is used twice
the amount of okra/lady finger. A popular side dish which goes well with
roti/ chapatti. Okras are stir fried here.
As
always the okras must be cleaned and dried before you cut them. You can cut
the way you would like to (round, elongated slit, half) Generally okra need
slightly more oil than any other veggie. Do not cover okras while cooking
else due to moisture they turn mushy.

Red Chilli Powder
Turmeric Powder
Garam Masala
Amchoor Powder
Salt
Curry Leaves

Method
1. Onion should be
sliced thinly.
2. Heat oil for
seasoning. Make the seasoning with cumin seeds. To this add chopped okra and
curry leaves and stir gently on medium heat till they turn tender.
3. Now add the
chopped onion and stir. Add the red chilli powder and turmeric powder. Lower
the heat and coo till both onion and okras combine well and have become soft.
4. Now add salt,
garam masala and amchur powder and give a gently mix. Let it cook for 2
minutes more.
5. Serve Bhindi Do
Pyaza with rotis and relish.
