Ragi Halbai
Ragi halbai is a healthy and tasty sweet that is easy to prepare
and something you cannot stop at one piece!! The sweet is prepared by
extracting the milk of finger millet and grated coconut with jaggery. You
can also make halbai with rice and wheat instead of Ragi. This is another
Udupi specialty. I will be posting recipes from my mother in law...
with this one of them.

Ingredients
|
Ragi
Grated Fresh Coconut
Jaggery
Ghee
|
1 Cup
½ Cup
To Taste
1-2 Tbsp.

Method
1. Grind grated
coconut with ragi and filter the milk in a large pot.
Note:
You can filter the ragi and coconut residue with little water and strain it
with a filter. Repeat this process of grinding and filtering 3-4 times till
you are left only with a little residue.
2. Add jaggery to
the pot according to taste. Stir well.
3. Keep stirring
continuously so that there are no lumps while stirring.
4. Cook till it
leaves the edges of the pan and till it does not stick your hand when you
touch.
5. Add 1-2
tablespoon of ghee and mix well.
6. Take a plate or
a tray, apply ghee, pour the cooked raagi haalubai and spread evenly.
7.
Cut it into the desired shape after it cools and serve
with ghee.
