Mysore Pak


A sweet dish of Karnataka. Usually it is made with generous amount of ghee only J. Here is a guest recipe by my good friend SriLakshmi.

Ingredients
 
 
 
Gram Flour / Besan
Ghee + Oil
Sugar
Water
1 Cup
2 Cups
2 Cups
¼ Cup
Method
1.  Heat ghee + oil in a pan. Take a tablespoon of this oil and ghee and add this to besan and mix well with your fingertips so that it looks like bread crumbs.
 
2.  Now for the syrup, mix sugar and ¼ cup of water and set on heat and stir. Once sugar starts to melt, stop stirring let it boil and reach a string consistency or just drop a quarter spoon of syrup in a small bowl of water and check whether the syrup does not dissolve in water. This means the syrup is ready.
 
3.  At this stage start adding the gram flour little by little but quickly to the sugar syrup. Keep stirring as well. Stir well so that there are no lumps.
 
4.  In parallel to this, keep the oil and ghee mixture hot but not boiling.
5.  When the gram flour mixture starts bubbling, start pouring the oil and ghee mixture little by little with the help of a ladle. The gram flour mixture starts absorbing the oil mixture quickly and nicely forming a frothy mass.
 
6.  Meanwhile grease a plate and set.
7.  Stir till this gram flour mixture starts leaving edges and starts getting porous.


8.  This is the right time to transfer the mixture to the plate and set. Cut to desired size after 6-7 minutes.
 


9.  Let it cool. Store the pieces in an air tight container.
