Andhra Bitter Gourd Curry - Another
recipe from my friend Jhansi from Nellur District in Andhra
Pradesh and an expert in these type of dishes. I hope I have justified the recipe with my attempt.

Method
1. Chop bitter gourd to small pieces. You can let the seeds too. Take
buttermilk in a vessel. To this add chopped bitter gourd and tamarind paste.
Let this mixture boil for about 15-20 minutes.
2. Drain the bitter gourd and let it dry off. Cut them into pieces.
3. Heat oil in a pan and shallow fry the dried
bitter gourd and set aside. (You can deep fry as well). Grind the above ingredients in "to grind" and keep ready.
4. Now do the above seasoning. Add the ground paste
to the seasoning and sauté till there is no raw smell.
5. Add the deep / shallow fried bitter gourd to the
mixture and mix well. Add curry leaves, salt and sugar. Cook till done.
6. Serve with steamed rice.
