Pineapple Upside Down Cake (Eggless)
Here
goes an eggless variety cake “Pineapple Upside Down Cake”. It’s called upside
down because the sliced pineapples are laid down in the pan. Adding brown
sugar caramelizes. So in a total to tell you is that this cake starts with
melted butter with brown sugar until it starts to caramelize.
I love this cake when it is still warm.
Recommend you to serve warm.

All Purpose Flour
Powdered Sugar
Butter
Curd
Baking Soda
Sliced Pineapple (Canned)
Cherries (Optional)
Butter
Brown Sugar
Milk
Pineapple Syrup

Method
1. Get butter up to room
temperature
2. Mix and Sieve All Purpose
Flour / Maida and baking Soda and set aside
3. In a mixing bowl, add
butter and sugar. Whisk vigorously for 3-4 minutes.
4. Add curd and whisk again
for 2-3 minutes.
5. Mix the sieved all-purpose
flour and whisk again for 1-2 minutes
6. Now add milk and the
pineapple syrup in the can slowly and keep on mixing till you get a medium
consistency (not too thick or thin… thicker than Idly batter if you would
compare).
7. Preheat the oven for 5
minutes at 350 F (160 C). Grease the baking pan with 2 tbsp. melted butter.
Sprinkle brown sugar all over the pan after greasing with melted butter.
Place the sliced pineapples on the corners of the tray or assemble the slices
the way you like to. Place the cherries in between the slices.
8. Pour the batter to baking
pan so that the pieces are covered completely and bake for about 40-45
minutes at around 350 F till the Cake turns golden brown.
Note: The edges
bake faster than the center, so keep an eye on the edges. Another test is to
prick with a knife and knife to come out clean without any batter sticking to
it.
9. Take out the pan, let it
cool. Now turn the cake slowly upside down.
