Pesarattu / Whole Green Gram Dosa
Pesarattu
is a unique Telugu cuisine. A popular recipe of Andhra Pradesh. Typically the
dosa batter made of whole green gram, green chillies and ginger. Can be eaten
as both snack and breakfast served with chutney. Sometime also served with
upma tooJ.
I have
included this recipe with a combination of yellow moong dal. My Mom makes the
best Pesarattu I have ever eaten. Here goes the recipe…

Ingredients
|
Whole Green Gram
Moong Dal (Optional)
Rice (Optional)
Onion
Ginger
Green Chillies
Salt
Finely Chopped Onion (Garnish)
Oil

1 Cup

Method
1. Soak whole green
gram, moong dal and rice together for 5-6 hours.
2. Drain the water
and grind the soaked once along with 1 small roughly chopped onion, green
chillies and ginger. Grind to a smooth batter.
3. Add salt and
water if required for Dosa consistency.
4. Pour dosa on the
griddle and sprinkle finely chopped onion and press it on the dosa and
drizzle oil on the sides of the dosa. Cover with a lid and let it cook.
5. Flip the dosa
gently and cook.
6. Relish Pesarattu
with chutney.
Note: The batter need not ferment you can make pesarattu immediately.
You can either flip the pesarattu or
can just make them without flipping.
