Bean Carrot Curry


An easy stir fry of beans and carrot. A side dish which goes well with Rasam rice or curd rice.

Chopped Beans
Chopped Carrot
Green Chillies
Turmeric Powder
Curry Leaves
Grated Coconut
1 Cup
½ Cup

Seasoning
Mustard
Urad Dal
Oil
Asafetida
1 Tsp.
1 Tsp.
As Reqd.
A Pinch
Method
1.  Heat oil in pan and add seasoning ingredient one by one and do the seasoning.
 
2.  Now add slit green chillies and curry leaves and sauté for few seconds.
3.  Add chopped bean and carrot. Sprinkle a little water and turn the flame to low. Cover with a lid.
4.  After 4-5 minutes just stir the veggies, add turmeric powder and cover the lid.
 
5.  Cook for 10 minutes. Add salt and stir well. Turn of heat after about 2-3 minutes.
6.  Garnish with grated fresh coconut and serve.
