tomato and onion. Served with any type of roti.

Vertically slit Okra

Tomatoes
Ginger Garlic paste
Turmeric Powder
Garam Masala Powder
Red Chilli Powder

Method
1. Wash the Okras
and pat them dry. Trim the end and slit the okras into 4 pieces vertically. If
they are big slice them half with vertical slit .
2. Cut onion and
tomato to small pieces.
3. Heat 1 Tbsp. of
oil in pan and add cut okras and fry on low to medium till they become crispy
(may take 15-20 minutes) and set them aside in a plate.
4. In the same pan
heat another table spoon of oil and season with mustard and cumin seeds. Add
chopped onion and fry them for about 3-4 minutes. Add a tea spoon of ginger
garlic paste and fry for another 1-2 minutes.
5. Add the dry
powders one by one and salt. Sauté for 2-3 minutes till you get a nice aroma.
Now add tomatoes and stir fry till the tomatoes are mushy. Now add the fried
okras and mix and switch off the stove.
6. Garnish with
roasted sesame seeds and coriander leaves and serve.
