Sabudana Khichdi / Sago Khichdi
Sabudana
khichdi is a Maharashtrian recipe. Mostly prepared during fasting / vrat (no
onion and no garlic). Only crushed green chillies can be added instead of red
chillies too. Goes well with curd.

Sabudana / Sago
Roasted Peanuts
Green Chillies
Red Chilli Powder
Lemon Juice

Method
1. Soak sabudana for 5-8 hours. They double up in
size, soft and fluffy.
Note: Soak sabudana / sago with water
just enough to immerse them. I generally soak them overnight.
2. Coarsely crush the roasted peanuts.
3. In a mixing bowl add sabudana, crushed peanuts,
salt, sugar, red chilli powder and lemon juice. Mix well.
4. Heat oil in a pan, add mustard, when they start
spluttering add cumin seeds. Add Curry leaves and mix well.
5. Now add sabudana mixture and give a good mix.
6. Sprinkle a little water and cover the pan. Flame
on medium. Cook for 3-4 minutes and mix again.
7. Cover and let it cook for 5 minutes. Becomes transparent while cooking and
tends to be a little sticky. Put off the heat.
8. Garnish with coriander leaves.
