Black Eye Beans Curry
A side
dish that goes well with Phulkas and Chapatis. Black Eye beans dishes could
be bland, so takes a little more spice to bring in the taste.

Tomato
Onion
Coriander cumin powder
Red chilli powder

Method
1. Soak black eyed beans overnight. Drain the water
and pressure cook for 3 whistles.
2. Grind tomato and coconut to a smooth paste.
3. Heat oil in a pan. Splutter mustard then add dry
fenugreek leaves. Add onion and sauté.
4. After a couple of minutes add chopped tomatoes
and sauté till mushy. Add the ground paste and sauté for 3-4 minutes till no
more raw smell.
5. Add the dry powders and fry for a minute. Add
water, salt and sugar. Bring it to a boil.
6. Now add the pressure cooked beans. Cook for 6-7
minutes. Adjust the consistency of the gravy by adding water.
7. Switch off the stove and garnish with coriander
leaves and serve.
