Beetroot Sambar
Typical Udupi Sambar with beetroot. You can follow the same
steps and ingredients for a variety of sambars with different vegetables
(like mixed vegetable sambar, beans sambar, potato & Onion sambar, radish
sambar, Okra sambar, cabbage sambar, spinach sambar, fenugreek leaves &
onion sambar).

Beetroot

Method
1. Peel and chop beetroot to
bite size pieces.
2. Pressure cook the dal and
beetroot together and set aside.
3. To the cooked Dal and
Beetroot, add tamarind pulp, salt and jaggery.
4. Grind coconut (fresh/
frozen) with Sambar powder to a smooth paste.
5. Add cooked dal and ground
masala and let it boil.
6. Add curry leaves and
season the Sambar.
7. Adjust the consistency of
Sambar accordingly.
