Baingan Ka Bharta
Baingan
Ka Bharta is bhurta (minced vegetables) made from eggplant which Is usually
grilled in fire (for a Smokey flavor). This item goes well not only with
Chapati but also with rice.

Method
1. Cut onion and
tomatoes finely but separately. Crush garlic and mince ginger. Slit green
chillies.
2. Oil Brinjal/
eggplant. Place it in the oven on high for 15-20 minutes. Eggplant gets
charred and the flesh gets cooked in side.
Note: You can also grill this over the
stove flame with rotating the Brinjal for even grilling, the way my mom cooks
this.
How to smoke eggplant
3. Heat oil in a
pan. Add mustard. Once they start spluttering, add cumin seeds and asafetida.
4. Add green
chillies, curry leaves, crushed garlic and minced ginger. Sauté on medium to
low flame for 1-2 minutes.
5. Add chopped
onion and sauté for 4-5 minutes. Add chopped tomatoes and cook for 5 minutes.
6. Add the dry
powders (coriander, cumin, turmeric) and salt. Mix well and cover the pan
with a lid and let cook till they turn soft.
7. Take off the
burnt / charred skin of eggplant. Discard the stem portion. Cut the inner portion of eggplant to medium
pieces.
8. Add these pieces
to the mixture which is cooking. Mix well.
9. Cook on low flame
for 5-6 minutes. Garnish with coriander leaves and serve.
