Avial is
a thick coconut gravy based mixed vegetables curry that is aromatic and goes
well with both rice and chapati.

Method
1. Cut veggies
(beans, carrot, potato, ridge gourd) 1” in size and elongated.
2. Add a handful of
green peas too. With ½ cup of water cook the veggies till done. The veggies
should not be overcooked.
3. Grind coconut,
rice, cumin seeds and dry red chillies to smooth paste.
4. Add tamarind
paste, salt, jaggery and the ground paste to the cooked veggies.
5. Boil the mixture
well. Adjust the consistency by adding little water. Normally Avial is semi
liquid (thick gravy).
6. Season with
mustard. Pour the seasoning over avail.
7. Serve with rice
or chapathi.
