Ragda Patties / Aloo Tikki Chaat
Ragada
Patties / Aloo Tikki Chaat is a yummy and a filling chaat item. The patties /
cutlet are topped with gravy / ragda and with chutnies and onion, tomato and
thin sev. One of the favorite chaats in my home.

Method
1. Make the patties as in recipe of Aloo Tikki.
2. Soak dried peas overnight. They double in size
with overnight soaking.
3. Chop onion and tomato finely.
4. Add 2.5-3 cups of water and pressure cook for 4-5
whistles and set aside.
5. Heat a large pan with oil in it. Temper with
cumin seeds. Flame medium to low.
6. Add onion and sauté for 4-5 minutes, to this add
ginger garlic paste and sauté for 3-4 minutes.
7. Add the dry powders and fry for 3-4 minutes. To
this add chopped tomatoes and cook till mushy. Turn heat to low.
8. Now add cooked peas and check for the
consistency, bring it to boil simultaneously adding salt and sugar to taste.
9. Mash the peas lightly so that the gravy becomes
thicker. Cook for 9-10 minutes more and put off the stove.
10. To serve place 2 patties on a plate, pour the
gravy / ragada.(still hot)
11. Top them with green and sweet chutney.
12. Sprinkle chopped onion, tomato, coriander leaves
and sev.
