Methi Rice


I learnt this Methi rice recipe from my mother in law. Try out with Riata and Papad, you will enjoy this delicious dish!

Green chillies
Green Peas

Coriander and Cumin Powder
Garam Masala

Method
1.  Chop methi leaves coarsely, cut onion lengthwise and slit the green chillies.
2.  Cook rice separately and fluff them with a fork to separate each grain.
3.  Heat oil and ghee in a pan and add mustard. Let it splutter and then add cumin seeds and let them crackle.
4.  Add chopped onion, green chillies and grated ginger and sauté on medium flame for 4-5 minutes. To this add chopped methi leaves and sauté them for 9-10 minutes.
5.  Add turmeric powder and sauté. Now add coriander and cumin powder and sauté for a minute. Add garam masala and sauté for a minute more.
6.  Add salt and sugar to taste and cook for 2-3 minutes more and switch the stove off.
7.  Mix rice and methi mixture and squeeze lime juice.
8.  Garnish with roasted cashew nuts and serve.
