Matar Ki Kachori
Kachori
is a spicy snack. Crispy, deep fried snack filled with spiced peas. Matar /
Peas / Batani is the main filling ingredient. Filling can vary such as yellow
moong dal, papdi lilva etc.

Method
1. In a mixing bowl add maida, salt, rice flour,
semolina and hot oil and rub them with your fingertips.
2. Now add water slowly and knead the dough smooth
and firm. Cover it with a moist cloth and set aside for an hour.
4. For the filling take a little oil in a pan and
heat. To this add chopped onions and sauté for 3-4 minutes. Add ginger garlic
paste and stir till there is no raw smell. Try to coarsely mash the peas.
5. To this add the dry powders and mix. Add coriander
leaves and mint leaves too.
6. Sauté for 5-6 minutes more, add salt and mix
well.
7. Squeeze lime juice and put off the stove. Keep
the filling aside.
8. Now knead the dough and divide them into equal
portions. With the help of a rolling pin roll them into slightly thicker than
a Puri.
9. Place filling in between the Puri and bring the
edges together in the center and join them. Make sure there is no gap. Flatten
the Kachori.
10. Make the rest in the same manner and set them
aside.
11. Heat oil for deep frying. Deep fry the Kachoris on
both sides till golden in color.
12. Arrange the Kachori in a plate. Press the center
of the Kachori a bit. Garnish the pressed Kachori with finely chopped onion,
green chutney and sour chutney and RELISH……
