Method
1. Chop a tomato into big cubes and cut green
chillies.
2. Chop another tomato and onion finely but
separately.
3. Heat a little oil in a pan and sauté cumin seeds,
tomato and green chillies till mushy.
4. Switch them off, let it cool.
5. Grind the sautéed tomatoes, chillies and cumin
seeds with grated coconut (fresh/frozen) to a smooth paste.
6. Meanwhile in a separate pan make seasoning with
the above ingredients and sauté onion for 5-6 minutes on low to medium flame.
7. Now add chopped tomatoes and cook till done. Add
the ground paste, salt, jaggery and mix well. Adjust consistency of sambar by
adding water.
Note: Add tamarind pulp only if the
tomatoes are not sour.
8. Boil well and cook the sambar. Garnish with Coriander leaves.
9. Serve hot with idli / dosa
