Aloo Palak
Aloo
Palak is a great combination for roti / chapati. Whole spices can also be
added while seasoning and cooking aloo palak. Sugar is added to retain the
green color and to taste as well.

Method
1. Chop spinach roughly. Onion chopped finely.
2. Cook potatoes and cube them and set aside.
3. Heat a little oil and add spinach and green
chilli and sauté till the moist content of the spinach is gone.
4. Let it cool. Grind it to a puree by adding water.
5. Heat a little oil and sauté the onion. At this
point you can add ginger garlic paste and sauté for 2-3 minutes.
6. Add the spinach puree, milk and sugar and give it
a good mix.
7. Add the cubed potatoes and let them cook on low
flame for 8-9 minutes.
8. Add salt and garam masala and cook well, adjust
to desired consistency by adding sufficient water.
9. Serve hot with a dash of lemon and slices of
onion and definitely with hot rotis.
