Sweet Pongal
This dish is prepared on Sankranti / Pongal Festival. This
is a harvest festival in South India. This sweet dish tastes yummy because of
dal and rice mixed with jaggery. Offering pongal is a traditional practice in
temples in South India.

Rice
Moong Dal
Jaggery
Ghee
Milk
Cashew Pieces
Almond Pieces
Raisins
Desiccated Coconut

Method
1.
Heat a tablespoon of ghee in a pan on medium flame.
2.
Roast the moong dal for 3-4 minutes.
3.
Add the rice and roast both for another 2-3 minutes.
4.
Transfer the rice and dal to a pressure cooker.
5.
Add milk and approximately 2 cups of water and pressure cook
both.
6.
Meanwhile in another pan add jaggery and add about ½ cup
water and let the jaggery melt.
7.
Melt jaggery till it is attains syrup consistency.
8.
Filter the impurities in the melted jaggery.
9.
Mix the cooked dal and rice with melted jaggery.
10. Take another pan fry the dry fruits with a
tablespoon of ghee to light brown.
11.
Add desiccated coconut to the pongal.
12. Cook the pongal for at
least 8-9 minutes.
13. Garnish with dry fruits
and serve.
