Spinach / Palak Tambli
Tambli is coconut and
curd or buttermilk based gravy. Tambli is served with hot rice. No cooking is
involved. In Udupi, usually Tambli is served before the main course. Tambli can
be made with fenugreek seeds, curry leaves, ash gourd, bottle gourd, snake
gourd…

Spinach
Shredded Coconut
Green Chillies
Sugar

Curd / Butter Milk

Method
1.
In a pan heat a little oil.
2.
Add chopped spinach and green chillies. Sprinkle some water.
3.
Cook for 6-7 minutes till the leaves are dark in color.
4.
Let it cool.
5.
Grind spinach and shredded coconut to smooth paste.
6.
Add salt and sugar to the curd and whisk.
7.
Mix both the curd / Butter Milk and spinach paste.
8. Season and pour it over
Tambli.
