Mandakki Oggarane
A quick snack that can
be breakfast too. A variant to the recipe below can have shredded coconut
too. Puffed Rice is called Murmura in Hindi and Mandakki / Churmuri / Puri in
Kannada. Dry Mandakki Oggarane can also be made. Light on tummy and heart!!

Puri / Mandakki / Puffed Rice
Onion
Tomato
Green Chilli
Turmeric
Salt

Method
1.
Chop onions and tomato finely and slit green chillies.
2.
In a broad pan, heat oil, add mustard, Urad dal, Chana dal,
Cumin Seeds and Peanuts.
3.
After the seasoning, add chopped onions and split green
chillies.
4.
Sauté for 2 to 3 minutes. Now add tomatoes and curry leaves.
5.
Cook for 2 to 3 minutes
6. In a separate bowl, soak
puffed rice/ Puri / Mandakki for less than a minute and squeeze out the water
from the puffed rice.
7. To the pan, add salt,
turmeric, sugar and mix well.
8.
Now add the soaked puffed rice to the pan and give a good
mix.
9.
Cook for another 2 to 3 minutes
10. Squeeze lemon and
garnish with coriander and sev
11. Mandakki Oggarane is
ready to serve!
