Cranberry Rice is one of the favorite dishes of my
daughter (It is pink!!). Cranberry rice tastes like a fusion of Lemon rice and
Puliyogare. Cranberries are also rich source of Vitamin C and can be a good
alternate for Tamarind

Ingredients
|
Rice
Cranberry
Onion
Green Chilli
Garlic

½ Cup

Mustard
Urad Dal
Chana Dal
Peanut
Curry Leaves

Method
1.
Cook rice separately and fluff the cooked rice with a fork
to separate each grain.
2.
Slit green chillies, slice garlic and chop the onion finely.
3.
In a pan take a little oil on a low to medium flame add the
cranberries and sauté for a few minutes (4-5 minutes) covering the lid.

Let it cool.
5.
Grind it to a paste. Do not add water.
6.
Heat a pan, add oil and do the above seasoning.
7.
To this add the green chilli, garlic and onion and sauté for
3-4 minutes.
8.
Now add the cranberry paste and stir fry for a couple of
minutes and switch off the stove.
9.
Mix this mixture with the rice.
10. Serve Cranberry Rice
warm.
