Bitter Gourd and Peanut Fry

Chopped Bitter gourd / Hagalkai / Karela
Crushed Peanuts
Sesame seeds
Coriander Cumin Powder
Red Chilli Powder
Turmeric Powder
Jaggery
Salt
Lemon / Lime Juice
Curry Leaves

Method
1. Take the chopped bitter gourd in a vessel, add
turmeric powder and a spoon of salt and mix well. Set it aside for 15-20
minutes.
2. Now squeeze bitter gourd and squeeze out the
bitter juice.
3. Heat oil in a broad pan. Add mustard. When it
starts to splutters, add the crushed peanuts and start roasting on medium
flame.
4. Roast for 3-4 minutes, now add sesame seeds and
roast for 2-3 minutes.
5. Now add the squeezed bitter gourd and curry
leaves and fry.
6. Fry on medium to low heat for 10 minutes.
7. Now add the dry powders one by one and mix well.
Add jaggery and check for salt.
8. Cook for 3-4 minutes more and switch it off.
9. Squeeze lemon juice and mix well.
