Bendekai Bolu Huli / Okra cooked with Lentil

Ladies Finger / Bendekai Bolu Huli is again a delicacy of Udupi. Bolu Huli is
a type of sambar prepared with lentil and without using coconut. Here sambar
powder may be used or may not be used. Sambar powder is basically used to
enhance the flavor of sambar. Brinjal / Eggplant is another alternate for
bolu huli.

Ingredients

Okra / Bendekai
Toor Dal
Tamarind Pulp
Jaggery
Salt
Curry Leaves
Coriander Leaves

Method
1. Pressure cook Toor dal separately.
2. Cut okra to 1 inch size.
3. Cook okra in tamarind water.
Note: Dilute the thick tamarind pulp
with water (about 1 cup) and heat till boil. Now add the okra and cook till
they are done, see that they stay still firm. Cooking okra in tamarind water
is to avoid the slimy nature of okra.
4. Now add salt, jaggery, curry leaves and cook for
2-3 minutes.
5. Add in cooked dal. Adjust the consistency of the
sambar by pouring some water and let it boil. To this add sambar powder and
cook well.
6. Season the sambar with mustard and dry red chilli
and pour it over the sambar.
7. Garnish with coriander leaves.
